Jam jars are great for ice cream as you can use them for little puds and also you don't end up eating your entire batch in one sitting. This recipe does about 3 jars.
- 4 egg yolks
- 4 pudding spoons honey
- 300ml double cream
- 6 pudding spoons of Amarula
- Chocolate spread (for the top)
- Orange zest
Method
Beat the egg yolks for 5 minutes with a whisk until thick and pale. Add the honey. Whisk for 3 more minutes. Now add the cream and Amarula and beat for 30 minutes. This is a bit of a pain if you haven't got one of those cheeky non-hand whisks. However, there is a fantastic solution that Elena and I came up with........use plastic bags! Check out the video below:
When it is ready, pop in some jars and freeze for about 24 hours. When you want to eat it, scoop some chocolate spread on top and then grate some orange zest on top - this sounds a bit picky but it is definitely worth it!
