- 1 onion, roughly chopped
- 1 aubergine sliced
- 4 tablespoons olive oil
- A good tablespoon cut ginger
- 400g tomatoes
- Tin of tomatoes
- 2 tablespoons Curry powder
- 1 tablespoon of Garam masala
- A little Coriander
- Salt and pepper
Method
Fry the onion and aubergine in the oil until brown/softened. Add the ginger and curry powder and fry a bit more.
Chop the tomatoes and chuck in. Also pop the tinned tomatoes in to add a bit of liquid. Cover with a lid and chuck in the oven at 180 degrees for abut 20-25 minutes.
Take out. Stir in the Garam Masala, coriander and salt and pepper.
Serve with rice (this takes about 20 minutes to cook so pop get started on that just after you put the curry in) and yoghurt.
Done. Tastes amazing and keeps vegetarians happy!
