- Half an avocado
- 1 egg
- 2 rashers bacon
- Pasta
- Black pepper
Method
Fry the bacon. Get the pasta on in some boiling water with a slug of olive oil and salt. Chop the avocado up into small cubes and scrape any leftover flesh from the skin with a spoon.
Drain the pasta; leaving the pan off the heat, chop in the bacon and the avocado. Crack the egg over the top. Stir like mad with a spatula so the egg breaks up and put the pan on a low heat for about 10-20 secs, stirring all the time. It should go kind of creamy. Chuck in plenty of black pepper.
Eat immediately!
