- 930g beef mince (suggest going to a butcher if you can)
- 1 red onion
- 2 eggs
- 1 tablespoon of crushed coriander seeds
- A pinch of cumin
- 1 teaspoon of dijon mustard
- 2 handfuls of breadcrumbs (toast a thick slice of bread then blitz it in a blender or equally you can buy them ready made)
- Salt and pepper
Method
Pop the mince in a large bowl and add all in all the ingredients. Mash it up with your hands. Go for a kind of groping technique.
Shape them into balls in the same way you shape a snowball and pop them on a rack in a baking tray - see picture. This means that the fat runs off. I didn't do it but I am told you can put onions and mushrooms and things under them if you like and then the fat makes them super-delish.
Cook for 25 mins at 200, then take out and add cheese if you want it. Pop back in the oven for 2 mins. Could use blue cheese if feeling radical.
