This is a Jamie Oliver recipe, although I added a bit more honey to make it a little sweeter. It's very refreshing. I bought these rather funky lolly moulds from Amazon as I couldn't find any in Durham. #SummerIsAStateOfMind
This is rather gorgeous, especially on a sunny day! I have a superb friend, James, who sent me a bottle of Amarula for Barking Baking Booze. The review will go up here. Equally, it seemed silly just to drink #ResponsibleStudent so I've turned it into some ice cream! Elena and I made this and we even invented a special way of holding a whisk without having to buy one of those £500 things from John Lewis in the process... check out the video below!
Jam jars are great for ice cream as you can use them for little puds and also you don't end up eating your entire batch in one sitting. This recipe does about 3 jars. This recipe is based on one from BBC Good Food and is a rather lovely little lunch. The recipe below does one fairly hungry person. It is fabulously healthy and very easy. Give it a go.
This was a lovely little supper. Very healthy. In Tesco you get 2 fillets in a pack and there always seems to be a "2 pack for £7" or "3 for £10" on all meats. Suggest you get on it.
Wooaaah. This was really good. The avocados make it creamy and healthy whilst the salty bacon gives it a bit of a tang. Very nice. Very easy. Xiang and I have been saying for ages how we must cook something together but somehow it never quite happened! We finally got round to doing it on Saturday. Venus, Elena, Xiang and I all had a superb evening making this lot. Xiang brought some duck which, by chance, had a sauce that went splendidly with the spring rolls. It really was a fantastic evening.
I thought that we would be left very hungry but I was so wrong. We ate like kings! Venus also cooked a delicious cabbage thing which was basically cabbage fried in ginger and garlic with a little water. Very nice. For pudding we had some "custard buns" - they are like sweet bread filled with custard. You can get them from the Chinese store opposite the bus station (in Durham); this is where we got the pastry from. This is one that can be done about 3 days in advance. If you are having a dinner party why not cut some toast into rounds using cookie cutters, pop a slab of goat's cheese on, grill it briefly and then lop the salad on top - this works very well as a smart little starter. Equally, you can have it for lunch. This was originally by Claire Macdonald. Her recipes tend to be pretty fab so worth a go. This is another great Nigel Slater recipe which I have slightly adapted. It is absolutely divine. He puts waayyyyyy more mustard in but I found the amount below is just right. Serve with dauphinoise potatoes, some roasted tomatoes and the rest of the salsa.
OK so when I first did this I thought it was Moussaka. I was wrong. Moussaka doesn't have courgette apparently... So this is a hugo-ism. Not going to lie my Dad didn't like it but my brother and Mum did, so I thought it's worth sharing anyway. It is pretty healthy (except the cheese!).
Great as a starter for a dinner party. Really nice yet actually quite simple, just requires a bit of organisation. Can be done the night before.
Everyone loves cheesecake. This is as easy as it is going to get. No gelatine or anything like that but it still works. This makes a nice light cheesecake that is perfect after a good meal. Make well in advance and ideally leave it to set overnight.
Part of the problem I find with smoothies is that they are often so stuffed full of fruit that they become, as has been widely reported, almost as bad for you as sugared drinks like Coke. Thus, it seems sensible to make a drink out of just one fruit. Yes, you are not getting all of your five-a-day from this, but equally you are not getting the sugar intake. So easy. Just chuck a whole, stoned peach in a blender with a glass of milk. Done. Skin if you feel strongly about it but I really don't care so I did not bother.
Smoothies are awesome. Fact. Healthy. Easy. What is not to like? Give these a go. An amazing recipe.

I owe this one to my fantabulous aunt. A nice easy pudding and absolutely delicious. We have been on holiday in Cornwall (wooo go Cornwall!) for a bit - fortunately Hurricane Bertha kind of just grazed our bit so we have still been able to beach and sail and things. There is something about sea air that takes it out of you so it was really nice to sit down and have a proper meal! This is splendid. Try it.
