Today, I went to one and walked up and down the aisles desperately trying to locate Fennel, but emerged with glacé cherries!
To be honest I was looking for an excuse to try these. The other day, whilst I was still up in Durham, I tried to do shortbread/biscuits in the microwave but for a number of reasons these did not work as well as I had hoped and I put it partly down to the microwave (I know a bad workman blames his tools but microwave heat is different). Thus, now I have an oven on site, I thought I would give it another go!
They are brilliant. Give it a shot!
- Plain flour (4 tablespoons)
- Caster sugar (4.5 tablespoons)
- A good knob of butter
- 5 tablespoons of double cream
- Glacé cherries
Method
Add the flour, sugar and cream together in a mixing bowl. Mix. If it is not doughy, add enough soft butter to make it so.
Now add the cherries and whizz so that they break up and there is an even distribution of cherries throughout.
Flour a baking tray (so that it does not stick) and cook for about 10 minutes at a high temperature. Keep an eye on it so that it does not burn. Take it out just as it is turning golden and leave to stand for a bit. It will harden as it cools and will continue to cook in the baking tray. Leave to cool on a cooling rack.
These are really really good.
