Give it a go. Very simple to do and you'll feel like a pro.
Base:
- 250g ordinary digestives
- 100g butter
- 70g caster sugar (more needed in the cheesecake bit so see below...)
The cheesecake bit:
- 450g cream cheese
- 1 egg
- 50g caster sugar
- 2 teaspoons of vanilla extract
- A couple of pudding spoons of chocolate spread
Method
Pop the butter in a pan and melt over a low heat. Break up the digestives with a rolling pin or other heavy object(!).
When the butter has melted, add in the digestives and the sugar. Give it all a stir a stir with a wooden spoon.
Line a baking dish with tin foil and pop the biscuit in and then spread flat with the back of a metal spoon. Put to one side.
For the top:
Whisk the egg, cream cheese, caster sugar and vanilla together for 3 mins. It'll go lovely and white and smooth.
Pour the mix on top of the base. Now pop a couple of spoons of chocolate spread into a bowl and microwave for about 30-60 secs. It'll go lovely and smooth. Now dollop it on top of the cheesecake and gently marble it (see the video for this).
Cook for 30 mins at 180. Let it cool for a bit then pop in the fridge for ages (overnight is great; I didn't cover it until the following day when it had totally cooled) and then cut up and eat! Makes about 6 really good chunks.
