- 4 rashers of streaky smoked bacon
- 1 courgette
- 1 clove of garlic
- 3 pudding spoons of half fat creme fraiche
- Salt and lots of black pepper
- A hunk of goat's cheese, parmesan would work really well here
- Tagliatelle
Method
Chop the bacon up into small hunks. Fry in a little oil until just browning (for a couple of mins). Add in the chopped garlic and then the grated courgette. Let it all fry together for a few mins. The courgette will soften up nicely. Once it looks done, turn the heat off.
Get the tagliatelle on. Drain the pasta (reserving a small cup of the pasta water if you want, I just used a small cup of normal water because I forgot). Bung the pasta in the frying pan. Toss about a bit - suggest using a pincer action with a fork and a wooden spoon or something. #youdoyou.
Add in the creme fraiche and the cheese. Stir about, maybe put the hob on to heat it up a bit. It's probably going to be a tad dry so I suggest adding a splash of water now (if you saved pasta water then add that). This should make it more 'creamy'. Don't add too much otherwise that'll just be soggy. Not good.
Serve. Top with more black pepper.
