- 1 onion, chopped up
- 2 cloves of garlic, chopped up
- 6 rashers of bacon (ours was steeped in syrup!), chopped up
- Tin of chopped tomatoes
- 350g tomato and basil sauce (or another tin of tomatoes)
- A good pinch of herb de provence
- Coriander
- Salt and pepper
Method
Fry the onion and garlic in a pan with plenty of olive oil. When the onion has softened and beginning to brown add the bacon and fry up. Next add in the chopped tomatoes and sauce (or other tin if you haven't got any) and the herbs and salt and pepper. Cook covered for about 15 mins. Done.
Can also do asparagus with it: chop about an inch off the stem and cook in salted boiling water for about 5 mins - check and it shouldn't be tough. Drain the water and add a good lump of butter and some pepper.
