- 1 onion
- 1 red pepper
- 450g chicken breast (I used mini fillets and chopped them up)
- Good shake of paprika
- Good shake of oregano
- Good shake of cumin
- Careful shake of chilli powder
- Salt and pepper
Salsa (cheat)
- Cherry tomatoes, chopped
Other bits and pieces
- Tortillas
- Guacamole
- Soured Cream
- Grated cheese
Method
Grab a wok. Pop a slug of olive oil in. Pop the chopped onion and peppers in and fry until it's going a bit yellow. This should be a few minutes at a medium heat.
Whilst the veg is in, chop up your chicken fillets and find your spices.
Bung the chicken in and then the spices. If in doubt add more spice because it gives flavour. Pretty sure the chilli powder is the one that makes it hot hot hot so just go as hard as you want with that.
Fry until the chicken is cooked. This won't take too long. Just make sure you keep turning it all with a wooden spoon. The chicken is done when no longer pink - just fish out a bit and chop it in half to see.
Salsa: not really a salsa but works for students - just chop the cherry tomatoes in half and bung in a bowl. Done.
Heat the tortillas in the microwave (they should have instructions on them but they take about a minute).
Eat! I go in this order:
- Tortilla
- Soured cream
- Guacamole
- Chicken
- Cheese
- Tomatoes
And then wrap it all up. Don't think there is a set way but this was tasty!
