- 2 rashers of bacon
- 100ml milk
- 50g plain flour
- 1 egg
- Butter
Method
Fry the bacon and put to one side.
Measure the milk out in a jug and crack in the egg. Beat with a fork until it is foamy/bubbly. Now add the flour and mix well so that there are no lumps. It is quite thick.
Get a non-stick pan on the heat and put a knob of butter in. When it is fizzing pour the pancake mix into the middle of the pan - it will spread into a circle. Do not put too much in - ideally it wants to stop before it hits the side of the pan. Leave it for about a minute; then flip it when the bottom looks nicely golden and the top has gone slightly rubbery. When you flip it you can add a little more butter.
It should be done after a few minutes. Take it out and pop the bacon on one side (see the picture) and then drizzle a teaspoon of honey over the top and roll it up from the bacon side.
Before you eat it, pop another load of pancake mix in the pan and then let the first side cook whilst you eat the pancake! This recipe makes about 2 large pancakes and one small one (which could be a sweet one with chocolate and peanut butter if you like...).
