I think this is my new favourite one. It's super simple and delicious. Give it a go. Great for late night reading sessions!

Bung the butter, sugar, flour and egg in the mug (make sure it's a large one!) and then beat up with a fork. Now pop in the vanilla and whizz.
Pop in the microwave for 1 minute then dust with icing sugar if you have it.
- 1 large knob of butter
- 3 pudding spoons of sugar
- 3 pudding spoons of self raising flour
- 1 egg
- Vanilla essence - I just used the cap on the bottle as a measurer
- Icing sugar (for dusting)
