A tip. Make sure the ice cream is super cold and then cut it into pieces and make a layer of 'sandwich centre' and gently squish. If you just use a ball of ice cream it a) looks a bit odd and b) means you can't press it together without damaging the structural integrity of the cookie. And I'm not about to ruin a good cookie.
This recipe made 4 sandwiches for me. Enjoy.
- 100g butter, softened
- 100g muscovado sugar
- 1 pudding spoon golden syrup
- 150g plain flour
- 100g chocolate, broken up into chunks
- Vanilla ice cream
Method
Preheat oven to 180 degrees.
Beat butter and sugar together until nice and creamy, then add in syrup and blitz.
Carefully mix in the flour (start slowly so it does not fly everywhere!). It will turn quite crumbly. Now add the chocolate chunks. Work the dough together with your fingers; the heat from your hands will make it go pretty sticky.
Divide into 8 small balls and place them well apart on baking sheets. Do not flatten them.
Cook for 5 mins in the oven then take them out, grab a cookie cutter and gently flatten them with your fingers so that it is the shape of the cutter. Cook for further 4.5 mins. Take out and leave to cool; they will harden up.
Grab some ice cream and sandwich between two cookies (base side on the centre). Enjoy!
