- 1 onion
- 2 courgettes
- 1 large aubergine
- 2 tins chopped tomatoes
- 400g mince
- Glass of red wine
Method
Fry up the onion. Chuck in the chopped aubergine and courgette. Mix it about a bit. Then add the two tins of tomatoes and a glass of wine. Pop in oven at 200 for 20 minutes.
Whilst it is in the oven, fry up the mince until brown. Put to one side.
Take tomato stuff out. Pour the mince into a dish. Ladle the tomato and aubergine in and mix everything about. Cover with tin foil and pop in for 20 minutes.
Grate a load of cheese over the top and then cook for a further 10 minutes, foil off.
