Wooooaaaahhhh these are so good. If you feel like being creative with a Cadbury's Oreo Chocolate Bar then this is the way to go! Absolutely fantastic. Gentle reminder: voting for the Virgin "New Things" Competition reopens on Monday 18th at 10am and closes on 20th May at 5pm. We need 550 votes to get shortlisted. If you want to support us, please put the date in your calendar and vote and share the link: http://www.virginmediabusiness.co.uk/pitch-to-rich/new-things/the-barking-baking-company/.

Ingredients

  • 340g caster sugar (12 tablespoons!)
  • 100g  milk chocolate (any; I used Tesco's own brand)
  • 120g Cadbury's Oreo Chocolate Bar
  • 3 eggs
  • 175g butter
  • 115g plain flour
  • Teaspoon of baking powder

Method

Melt the milk chocolate (not the Oreo chocolate) and the butter together in a Bain Marie (basically just a bowl over some boiling water). Add the sugar to a large mixing bowl and when the chocolate and butter has melted, stir in together. At this stage it looks pretty unattractive but smells amazing!

Whisk up the eggs until frothy and then add to the mix a little at a time. I suggest trickling it in and stirring at the same time. Get the oven on now to give it time to heat up; you want it at 180.

Add the plain flour and baking powder and stir in. It should thicken up. Now break in the Oreo chocolate bar and stir it up.

Pour the mix into a baking tray lined with some baking paper (not too much otherwise you will set fire to it , as I discovered the hard way in my first term at Durham...) and cook for 30 minutes at 180 degrees - after 20 mins you'll may need to cover it with tin foil so that the top doesn't burn - keep an eye on it!

Check it is cooked by stabbing it with a knife; if it comes out clean (ish - remember this is a brownie so we like it kind of gooey!) then it is done. When it is done, let it stand and cool then take it out of the baking dish and cut up! Sprinkle some icing sugar over the top to make it look pretty!
