- 1 onion
- 2 courgettes
- 1 aubergine
- 2.5 tins tomatoes
- Salt and pepper
- Olives, if you like them
Method
Fry the onion off in some olive oil. Chop the courgette and aubergine in and fry for a bit. Then add the tomatoes and season with salt and pepper.
Cook for 35-40 mins at 180 degrees (lid on!). Let it stand for a bit. Stir in the olives. Eat!
