- 2 pudding spoons self raising flour
- 1.5 pudding spoon caster sugar
- 25g butter
Method
If the butter is hard, pop in microwave for 20 secs then add the sugar and flour to the mug and mix it to a dough with a knife. It will be quite crumbly but do not worry! Pop the mix onto a plate with some baking paper on it and then press it into a circle (it will no longer be crumbly). The circle wants to be about as thick as the picture shows - about 1 cm. Cook for 2 minutes on high.
Now let it cool and harden (I put it on the ground outside for about 5 minutes but you could run cold water down the back of the plate to take the worst of the heat off or put it in the freezer for a bit).
Cut it into bits and it looks and tastes like shortbread! I also found it is very nice with jam!
