- Small handful of spinach
- 1 spring onion, chop both ends off and cut into pieces
- Large hunk of feta
- 1 egg
- Salt and pepper
Method
Grab the spinach and chop it up. Do the same with the spring onion. Chuck it all in a vessel (I used a measuring jug) and then add in the cheese, salt and pepper and egg. Beat together with a fork. Looks pretty unattractive at this stage but fear not, it gets better.
Pop a frying pan on a fairly low heat with a small knob of butter (see video) and then pour the mix on top. Flatten it gently with a fork (or other utensil).
Poke gently around the sides with a wooden spoon. Shake the pan to keep it moving and not sticking. When it's cooked on the first side, flip it like you toss a pancake.
Let it cook on the other side and then eat!
