1) It has chocolate in it.
2) It is for one person so you don't have to make a huge vat of it.
3) It is ridiculously easy (and not actually that bad for you).
- 2 pieces of bread
- Butter
- Sultanas
- Five pieces of chocolate (the 30p stuff from Tesco)
- 1 egg
- A small slug of milk (roughly 5 tablespoons)
Method
Cut the bread into round pieces using your ramekin as a guide. Butter one side of each piece.
Place one piece, butter side down, in the bottom of the ramekin. It should be a snug fit. Now cover the bread with some sultanas, brown sugar and the chocolate (try and keep the chocolate near the middle so it oozes out). Pop a very small knob of butter in.
Now cover with the second piece of buttered bread (also butter side down) like a sandwich. Sprinkle a little brown sugar on top.
Crack the egg into a cup and add the milk. Beat vigorously with a knife or fork. When all is combined, make a small hole in the top of the pudding with a knife and pour just over half of the egg mix in. Pour the remainder over the top. All the bread should be soaked but if it isn't, just pour a tablespoon of milk over so that it is!
Pop in the oven for about 15-20mins, or until it has browned slightly on top.
