I think the first time I ever had Redbush or "roobios" tea was in Berlin for Fred's 18th. I loved it then and I love it now. Elena very kindly got me this after I had some at her house (I think Venus originally got it...). It's amazing stuff. Can get it from Tesco I believe. You could use any tea. I'm kind of obsessed with tea. Glorious. It smells AMAZING. Went down well in the house I think. Enjoy. I got chatting to some chaps last year who do something amazing with bananas apparently; sadly I never got to try any of their stuff so this is a barking baking take on the idea of using up an old banana. It's really good. Try it. It's hot then it's cold. It's glorious and gold. #RudeBanana. So I made this cake for the BYO mentor hour we had the other day. Highlights include some rather amazing banana muffins by Hannah, Tim's chocolate cookies and Alexandra's rather splendid heart shaped carrot cake. And there was even more (shortbread, chocolate baskets etc).I know. Pretty funky stuff. This was my contribution to the evening. As you can see the cake bit is a tad thin because I used larger cake tins than I normally have (I stole Elena's). But I think it went down well. Milk and cookies is the classic winning combination. What better way of doing it than by drinking milk from a cookie cup? #winning. And there should be enough cookie dough left over to make a cheeky cookie whilst you wait. Went down well with the house! This is the same recipe as the Barking Baking Chocolate Cookies. Share with a friend as this is a monster to eat on your own! So some people make tarts by doing it upside down. They chuck in their apple and cinnamon and sugar and then the pastry and then bake it. But this seemed way to risky for me. So I did it this way. My cunning tactic was to chuck a lid on top of the whole thing whilst it baked so that the apple did not dry out. It worked really well! Give it a shot and let us know what you think. So if you fancy a mini pud but don't want to bake an entire cake then this could be the thing for you. Don't get me wrong I love cake in a cup but there's nothing like a proper cake that's been baked in the oven. You can have problems with them drying out but this recipe works really well so give it a go. You can, of course, share it. But that's up to you. When BuzzFeed did their recipe they just used bought 'brownie mix'. Where's the satisfaction in that? Here's a cheeky recipe for super fab brownies using three ingredients. And it's got a cheeky vanilla cheesecake-y top. Living the dream. So this is like our Three Ingredient Brownie recipe but with a cheeky vanilla cheesecake topping! FUNKY. Did it with proper Nutella and it's just gorgeous. I am a huge fan! They're really lovely and moist. Went down very well! I cut it into 6 large slices. So I was pottering off to the shops when I bumped into Mike and we got chatting and he suggested I try this. It's a rather amazing tomato tart. Well worth a go. Vegetarian. Glorious. I tried having it after the oven when it was still hot but can confirm it's much better when it's cool. Suggest maybe taking it out of the fridge a little before eating though so that it has time to come up to room temperature a bit. Give it a go! Method Pop everything in a bowl and blend. The mix should turn to a kind of moist blu-tack consistency. Pop a small ball onto a baking tray lined with baking paper. Now flatten it (see vid) and then pop a little chocolate spread in the middle. Grab another small ball of dough and flatten it in the palms of your hands then cover the chocolate spread and pinch the sides together. This recipe, despite Buzzfeed's claim of 18 makes 7 good sized cookies. Cook for 7 mins at 180 then let them cool entirely. The Verdict: they are tasty but not quite cookies; more like thin brownies. Still that's not a bad thing! My housemates really liked them so that's pretty good in itself! Well worth a go considering how easy they are to do. So this recipe came from Sally's Baking Addiction, which is a really fab site for all things sweet. She uses Nutella and Graham crackers but I'm in the UK and they don't have Graham crackers over here so I used digestives. Perfect. Give it a go. Very simple to do and you'll feel like a pro. So I said that for my New Year resolution I was going to be more vegetarian because, as has been duly noted by Ravi and Chloe, I am really not great at it. This was a lovely little supper that was actually surprisingly filling. And you feel gorgeously healthy afterwards. Very easy, very nice. Give it a go. It's not too late to make some funky mince pies! These are such a cheat but to be honest taste pretty great. Dusting with icing sugar is a good shout. Not really a hugggeee fan of gingerbread any time apart from round christmas. This recipe is based on one from BBC Good Food and works a treat. You may have seen my attempt at making a gingerbread house (it didn't work!). This is a difference recipe and is lovely. Will try a house again at some point when I have recovered a little bit..! Cora was the chief decorator here, which is why they look lovely. See some of my attempts in the vid below. I love duck. When I saw that it was in the 2 for £7 or 3 for £10 deal in Tesco I couldn't refuse. That means this is the same price as chicken really. So do it. This is about as easy as it gets. Takes about half an hour so you don't even have to slave over a hot stove for hours. Enjoy. Watch the video. This is just like a bread and butter pudding but with Jaffa Cakes. It's amazing. This makes one. So this is a new take on the classic barking baking cookies. It's lovely. I accidentally bought peanut M and Ms but actually it tastes fab anyway so well worth a go. Dig in. This is a lovely little meal. You don't have to put it with pasta; there are many different ways of serving it. The key thing to learn here is how to cook the salmon a healthy, delicious way. We don't add butter because we're feeling healthy. Check out the video. When life gives you lemons, make lemon drizzle cake! Kathy and James made one the other day and I thought it was fab so I had a go at my own version. This recipe is based on one from the BBC site but I didn't use 4 eggs as I couldn't see the point. I used two eggs. Check out the video and subscribe to our channel! This is exactly the same recipe as the Coralicious Chocolate Cake but you only cook it for 23 mins at 180. The recipe does 12 cupcakes with a little bit left over (good if you like to lick the bowl).
Apparently my grandmother gave this recipe to my mum but she couldn't really remember. All very strange. However, this was a lovely supper; suggest having lots of vegetables and rice with it.
I got in touch with Mark from "Outside of The Breadbox" a while ago and he very kindly agreed to let me try his recipe for Eclairs. This is the result. It is rather fab. You can find the original recipe here. Mark used cherries but I used strawberries and blueberries as that's what we've got in the house at the moment. This is quite difficult as there are lots of different things you need to do but I had a lot of fun doing it so well worth the effort.
The cat, Truffle, was most intrigued by the eclairs! I think he approved. You can also drizzle some chocolate on top or melt some and then dunk the eclairs in/drizzle as you go if you are feeling like some real indulgence. So today is our first birthday! One year has passed since I started BarkingBaking.com! Thank you all for such fantastic support; this is rather delicious - the icing is sweet but not cloying. The taste of the raspberries balance very well with the chocolate. Well worth it.

Whatever you call them, I'm not going to lie, they're addictive. Sound impossible to do, but they're not. I've finally got a great recipe that works for this - I've tried 9 times! This is splendid. Our version of a molten cake. A couple of important things to note: 1. Use dark chocolate - the 30p stuff from Tesco is not ok. 2. Cut the baking paper into circles that fit into the base of the ramekin. 3. Be really careful peeling the baking paper off. This recipe is based on one by Dr Oetker. It's great. You'll never need to buy those Tesco ones again! Cora and I made a huge batch of these and sold them to raise some money for Cora's charity fundraiser! We raised over £60 in one afternoon - thank you to all who supported.
I did an avocado and tomato quiche a while back and so I thought I'd try a meaty version. This is really nice. Be sure to add a good pinch of salt. Great summer meal and pretty healthy!
