- 1 chicken breast
- Small handful of plain flour
- 1 tomato
- 2 tsp capers
- Handful of olives
- Splash of white wine
Method
Get your rice on.
Cut the chicken nearly in half, then open it up. Bash with a rolling pin to flatten. Smatter with plain flour and season on both sides.
Pop some olive oil in a frying pan and heat up. Fry chicken on both sides (a couple of mins for each side - check it's cooked by cutting open - shouldn't be pink).
Whilst the chicken is on, chop up your tomato and find the capers, olives and wine.
When the chicken is cooked, remove from the frying pan. Add in the tomatoes, capers and olives. Mix together. Add in the wine. Mix. Season with pepper. Heat on a low heat.
Now add in the chicken to heat through.
Serve with rice. Nice.
