I was walking back from rowing this afternoon with Sophie and we got talking about food and cooking. I admitted I had a courgette left over from my escapades with a ratatouille. I didn't know what to do with it. Sophie suggested, among other things, a courgette frittata. It's superb. And I feel sooo healthy. If you want something healthy and delicious this is for you. Peaches are just the most amazing things and probably my favourite fruit. Use a small banana for this (or half a large one) as we don't want to overpower the taste. Method Cut the peach, apple and banana into slices then put onto a plate with some baking paper (this helps stop it sticking to the plate). Freeze overnight. Blend in a blender when it's frozen solid. It's quite stubborn so you'll need to keep scraping it down with a fork. Enjoy. Makes about 2.5 ramekins of ice cream. This evening we all sat down and had a lovely meal. Hamish is busy trying to get sorted for university and so I had quite a good day today. As some of you will know from our Snapchat feed, I was trying out some Giovanni Rana pasta tonight after their people reached out and suggested we give it a go. We also cooked a very easy tomato sauce with it. Check out the recipe and our verdict below!
If you haven't already worked it out, I'm currently obsessed with these healthy ice creams. They taste amazing and are super healthy. What's not to like.
This really is gorgeous. Ice cream. Healthy. Fruit. You don't really get anything better. No added sugar. Just fabulous. Do it. Ingredients
Method Peel the bananas and cut them up. Hull (ie cut the green bit off) the strawberries and cut them into halves. Pop it all on some baking paper on a plate then freeze (overnight works great). Then when you want to make the ice cream, blitz everything in a blender until it's super smooth. You will probably need to poke a fork in and scrape the fruit down towards the cutty bit of the blender a couple of times. Serve immediately or pop in a pot, cover and freeze - be aware this (obviously) makes it go hard and it will not be the soft gorgeous stuff you get when you eat it immediately. It's almost too good to be true...but it isn't. It's healthy, fun, easy and actually tastes like ice cream. It's best when you make it and then eat it straight away otherwise it can go a bit brown. Apparently my grandmother gave this recipe to my mum but she couldn't really remember. All very strange. However, this was a lovely supper; suggest having lots of vegetables and rice with it.
Chaps. This evening we had beef stroganoff. This recipe comes from the "Children's World Cookbook" and it is very nice. The thing you have to watch here is getting the meat nice and tender. If it's tough, it's horrible. So be careful! I have always thought that beef stroganoff is one of those really tricky recipes to do; it really isn't. Well worth it. Only other thing to consider is try and buy nice meat from the supermarket as my parents assure me that this makes a difference... Anyhow, hope you enjoy!
Hamish and I have very different tactics when it comes to lunch. I am more of a pick and go person whereas Hamish makes these incredible foot-long sandwiches. Kind of like Subway but a bit less grimy... Anyhow, this is his first contribution to Barking Baking and it is pretty darn good. If you are patient enough to make one, do it.

Grab a nest, pop some cream in the middle then pile on the fruit. Done. This is a Jamie Oliver recipe, although I added a bit more honey to make it a little sweeter. It's very refreshing. I bought these rather funky lolly moulds from Amazon as I couldn't find any in Durham. #SummerIsAStateOfMind
This is based on a Nigel Slater recipe and is delish. He used broccoli but to be honest I'm not a fan so I used green beans instead. It's a great little supper with real flavour that can be done very quickly. Super stuff.
I did an avocado and tomato quiche a while back and so I thought I'd try a meaty version. This is really nice. Be sure to add a good pinch of salt. Great summer meal and pretty healthy!
So this is really really good. The recipe is based on one from a cookbook Elena has. The original recipe puts sugar in, but to be honest you really don't need it so we didn't bother (and kind of forgot). If you are doing a nice supper or just fancy something to nibble on in these long post exam days then this could be your solution...! Enjoy.
So having coxed today and managing not to fall in, we decided it would be super fun to celebrate by cooking a nice new tart. This has been recommended by a fantastically loyal follower on Instagram, Dianne. I promised some time ago to do a frangipane tart recipe. So, here you go. It's based on a Tesco recipe, with some adaptions. Elena, Venus and I all thoroughly recommend it! Keep revising... but not too much. #PROCRASTIBAKE.
This recipe is based on one from BBC Good Food and is a rather lovely little lunch. The recipe below does one fairly hungry person. It is fabulously healthy and very easy. Give it a go.
Cod is amazing. It has virtually no fat/salt/junk in it (I know, I read the packaging). Sure we chuck a bit of mayonnaise in this recipe but it makes it taste great and really it's so little that it is hardly worth worrying about.
People can get very hung up on their recommended daily allowance stats but I think that provided you are eating a balanced diet then it doesn't matter. You might not like this but I think the best "diet" as such is just eating a bit less. Certainly from my experience I know that when I am at home I eat soooo much more than when I am at university. This is because food is kind of 'on tap' at home. And the more I eat, the more I want to eat! But when I am at university I have to cook everything and buy everything so I don't really over-eat (although I do binge on Tesco Cookies every now and again!). Anyhow, this is a a splendid recipe and a great meal. This recipe covered 3 people but it could easily do 4.
This recipe is a Jamie Oliver recipe with a bit of a twist; we don't put the pastry on top as it tends to go a bit soggy and it is easier to reheat the casserole if it has not got pastry on the top.
This recipe comes from the BBC and was introduced to us by Hetty when they came over for a family meal. It is really lovely; I thoroughly recommend it. Takes a bit of time to prepare but so worth it, especially if you are having a dinner party.
This is my dad's favourite meal. Although it is really simple he insists it is the eighth wonder of the modern world. In fairness, it does taste great and is really easy to do. However, we never tell him this otherwise he would be unbearable. This recipe fed three people but really you could do about 4. Give it a go - suggest you have it with ketchup or baked tomatoes. Very nice.
Kedgeree is traditionally eaten at breakfast but really I think it makes for a rather lovely supper. It uses fairly simple ingredients and smoked haddock tends to be on offer. The great thing about this one is that it really fills you up. I also really like the way it can be the centre-piece for a meal - just pop it in a bowl and chuck it on the table and then you can have as much or as little as you like.
This made Elena wayyyy too happy. She loves what I call "cat food tuna". This is the kind of tuna you get in a tin. To be honest with you I think nothing smells worse. But she loves it. Weird. Anyhow, if you disguise the smell with this recipe you will actually quite enjoy the experience. Good luck.
