- Ready roll shortcrust pastry (always seems to be on offer in Tesco)
- 100ml semi skimmed milk (no more)
- 4 eggs
- 50g strong cheddar cheese (when you grate it in, a small mound should form!)
- 150g smoked salmon
- Large pinch of salt and a good grind of pepper
Method
Line a baking tin with baking paper.
Pop the pastry in, filling any gaps with more pastry.
Pour the milk into a large cup/bowl and add the eggs. Beat with a fork until everything is nicely combined. Add the chopped salmon and stir well. Season.
Pour the milk mix into the baking tin and then grate the cheese in - spread it around with a fork so it is evenly distributed.
Cook at 180 for 20 mins, then cover with tin foil and cook for 8 mins. Take the foil off and bring it right to the top of the oven to brown for 2 mins.
Eat.
