- 3 Peppers (for two hungry people)
- Two potatoes
- Cheese
Method
Cut the top of three peppers and remove the seeds and all the inner bit.
Boil two large peeled potatoes for about 20 minutes. Mash like mad with a fork, adding a little milk, butter, salt and pepper. Grate in a good hunk of cheese.
Pop the potato into the peppers, covering with the lid you created when you cut the peppers earlier. Cover lightly with olive oil and cook for half an hour in a hot oven.
BOOM. Done. One healthy supper.
