- 1 red onion
- Butter and oil
- 90g Red Thai Paste
- Coriander
- Rice for two people, two mugs works great
- 1 tin of coconut milk and 1 tin of water
- Two fillets of salmon
- Half a lemon
- Salt and pepper
- 3 spring onions, chopped
Method
Chop and fry the onion in the butter and oil. When it's softened add in the red thai curry paste and stir. Then add in the coriander. Stir. Add in the rice. Stir. Add in the coconut milk (it may be all white when you open it, just poke a spoon through and the watery bit will come out too). Now refill the tin with water and add that too. Stir and let it all simmer off about 5 mins. Add some of the lemon juice to the rice.
Chop the skin off the fish carefully. Squeeze a bit of lemon on top and season with salt and pepper. Carefully place on top of the rice and put a lid on and then let it simmer at a very low heat for 20 mins.
There will inevitably be a little bit of burnt rice with this one but the best way to get it off is to fill the pan with soapy water and boil it for a bit on the hob. Scrape around inside with a wooden spatula and it should come straight off.
