Also, I got half way through making this and realised it was a bit like the chocolate puds I like to make (these ones) and so I thought we'd make some little cheesecakes too. These worked really well! And because they come in little ramekins you don't end up eating waaayy to much. #BasicallyHealthy. All is explained below. Check out the video!
Have a really glorious Christmas!
- 2 Oranges
- 1 Lime
- 90g icing sugar
- 600ml cream
Squeeze the oranges into a bowl. Now grate the zest of the lime in. Now juice the lime. It’s super bitter right now. So add in the sugar. Give it a stir.
Add in the cream. Whisk until soft peak stage (see the video).
For the ice cream:
Pour it into a sealable vessel and freeze. Suggest you take it out a bit before serving so it softens.
For the mini cheesecakes:
Break up two digestive biscuits and pop them in a small ramekin and then chuck on some of the mix. Pop in the fridge and enjoy! Suggest grating the zest of some lime/orange/lemon on top to serve as it makes it look nice.
