5.5 tbs sugar
3 eggs whiz
6 tbs self raising flour
Blitz the flour and the sugar until creamy.
Now whizz in three eggs for 60 seconds.
When this is done, add the flour and whiz.
Peel the peaches and a few of the plums and gently stir in to the mix with a spoon.
Pop in a buttered cake tin for 30 minutes at 180 degrees (or until brown on top). The fruit makes this a moist cake and so it will not be cooked after this time. However, to stop the top burning, cover with tin foil and cook for a further 15 minutes.
Test that it is cooked by stabbing it with a knife/skewer. Ideally it should come out more or less clean. We like it slightly glumpshy!
