- Squeeze of lemon (about 2 tablespoons)
- Half an avocado
- Black pepper
- 1 fillet salmon
- Handful of kale
Method
Pop the salmon skin side down on some tin foil and cook for 13 mins at 180. It should be flakey when done.
Whilst the salmon is cooking, dice the avocado and pop it in a bowl. Squeeze in the lemon and mash it all up roughly with a fork. Season with a lots of pepper. Get some water boiling and chuck in a handful of kale; cook for about 5 mins (by which time the fish should be done).
Mix the kale in with the avocado and pop it all on a plate with the fish on top. Eat!
