I've adapted this recipe from a BBC Good Food one. Top stuff. Enjoy. Makes a good starter/nibble.
- 4 tomatoes, chopped roughly (not aggressively #lol)
- 1 clove of garlic, chopped finely
- 3 pudding spoons olive oil
- A baguette
- Salt and pepper
- Pack of parma ham or Serrano ham if possible
Method
Chop the tomatoes quite roughly and pop in a bowl. Add in the finely chopped garlic. Toss about. Add in 3 pudding spoons of olive oil, a pinch of salt and a grind of pepper. Toss about. Cover with cling film and fridge until ready to serve (for me this was a few hours which worked nicely as it allowed all the flavours to come together and the tomatoes to cool down).
When ready to serve, toast some thinly cut baguette and dollop the tomato bit on top. It's quite nice if it's a bit wet so spoon some of the liquid on too. Then place a piece of parma ham on top of that and make it look nice by gently grinding some pepper on.
Easy. Delicious. Makes quite a lot - probably about 10-12 depending on generosity!
