- 2 ducks (six people)
Season and cook for 2:10 hours 180. May need to cover with tin foil to stop burning.
For the jus/sauce:
- 3 cloves garlic
- Inch ginger
- Chile without seeds
Finely chop the garlic, ginger and chile (don't rub your eye when you do the chile - it will hurt!!).
Take duck out. Scrape fat etc into frying pan and heat for 3-4 mins with the garlic, ginger and chile. Boil. Add 4 tablespoons of water. Boil. Add 225g blackberries. Boil until soft. Sieve so just a jus is left.
Pak Choi - wash and boil in a very small amount of water (like doing spinach). When cooked, drain and add a knob of butter.
New potatoes with mint, just boil in water for 20 mins until soft.
