- 2 eggs
- 225g sugar
- 225g self raising flour
- 225g butter
- 1 tsp vanilla extract
- 126g galaxy counters
For the filling
- 130g butter
- 250g icing sugar
- 100g white chocolate, melted
Method
For the cake:
Slightly warm the butter so it's easier to whisk. Pop in a bowl. Add in the sugar then beat. Add in the eggs. Beat. Add in the flour. Beat. Add in the vanilla extract. Beat.
Finally, add in the counters and give it a stir with a spoon.
Line some baking tins with baking paper if you don't have tins with that magical slider thing (you'll know if you have one) then bung in the oven for about 12 mins before covering with tin foil. This stops it burning. Now cook for a further 8 mins. Let them cool.
Make the icing:
Whilst the cake is cooking, make the filling by melting your chocolate in a bowl over boiling water. Pop a fork in between the edge of the pan and the bowl to let some steam out.
Again, slightly warm the butter. Add in the icing sugar and then the chocolate. Whisk. Done.
When the cakes have cooled, spread the mix on and then sandwich together. Lovely.
Top with icing sugar.
