Elena and I made these in Cornwall; the recipe came from the condensed milk tin and it actually works and is lovely. We had a fab week and managed to swim every day. I know. Mad. Absolutely freezing but after a while you go numb so it feels warm. Such fun.
I got in touch with Mark from "Outside of The Breadbox" a while ago and he very kindly agreed to let me try his recipe for Eclairs. This is the result. It is rather fab. You can find the original recipe here. Mark used cherries but I used strawberries and blueberries as that's what we've got in the house at the moment. This is quite difficult as there are lots of different things you need to do but I had a lot of fun doing it so well worth the effort.
The cat, Truffle, was most intrigued by the eclairs! I think he approved. You can also drizzle some chocolate on top or melt some and then dunk the eclairs in/drizzle as you go if you are feeling like some real indulgence. So Federer and Djokovic are battling it out as we speak! Looks like it's going to be a great game! It's bound to go on for a while so why not make yourself a lovely little snack pot?!
Today is my birthday (woop!) and my grandparents very kindly gave me a waffle maker - I've been dying for one for ages as waffles are some of my favourite things! This is a rather splendid chocolate brownie waffle. It isn't crispy like some of the waffles I've had but it does have a pretty gorgeous gooey brownie-y centre. Well worth a go. Strawberries and cream were definitely a fab addition.
Melt in the middle chocolate puds. Chocolate fondant. Volcano cake. Whatever you call them, I'm not going to lie, they're addictive. Sound impossible to do, but they're not. I've finally got a great recipe that works for this - I've tried 9 times! This is splendid. Our version of a molten cake. A couple of important things to note: 1. Use dark chocolate - the 30p stuff from Tesco is not ok. 2. Cut the baking paper into circles that fit into the base of the ramekin. 3. Be really careful peeling the baking paper off. This is based on a Nigel Slater recipe and is delish. He used broccoli but to be honest I'm not a fan so I used green beans instead. It's a great little supper with real flavour that can be done very quickly. Super stuff.
I did an avocado and tomato quiche a while back and so I thought I'd try a meaty version. This is really nice. Be sure to add a good pinch of salt. Great summer meal and pretty healthy!
So this is really really good. The recipe is based on one from a cookbook Elena has. The original recipe puts sugar in, but to be honest you really don't need it so we didn't bother (and kind of forgot). If you are doing a nice supper or just fancy something to nibble on in these long post exam days then this could be your solution...! Enjoy.
This is rather gorgeous, especially on a sunny day! I have a superb friend, James, who sent me a bottle of Amarula for Barking Baking Booze. The review will go up here. Equally, it seemed silly just to drink #ResponsibleStudent so I've turned it into some ice cream! Elena and I made this and we even invented a special way of holding a whisk without having to buy one of those £500 things from John Lewis in the process... check out the video below!
Jam jars are great for ice cream as you can use them for little puds and also you don't end up eating your entire batch in one sitting. This recipe does about 3 jars. Wooooaaaahhhh these are so good. If you feel like being creative with a Cadbury's Oreo Chocolate Bar then this is the way to go! Absolutely fantastic. So having coxed today and managing not to fall in, we decided it would be super fun to celebrate by cooking a nice new tart. This has been recommended by a fantastically loyal follower on Instagram, Dianne. I promised some time ago to do a frangipane tart recipe. So, here you go. It's based on a Tesco recipe, with some adaptions. Elena, Venus and I all thoroughly recommend it! Keep revising... but not too much. #PROCRASTIBAKE.
This recipe is based on one from BBC Good Food and is a rather lovely little lunch. The recipe below does one fairly hungry person. It is fabulously healthy and very easy. Give it a go.
I met up with some old school friends the other day and James was revelling in his recent success with homemade burgers. It only seemed right that I give it a go, so here is the attempt. I can report that they were fantastic! Based on a Jamie Oliver recipe. Hardly any effort and much nicer as you know exactly what has gone in it.
Innocent smoothie. Wow. It’s just so amazing. If you don't already, you should love the drink and should love the packaging - it makes for really good reading. It's just brill, like a brillo-pad.
If, however, you are tired of the same old brilliant smoothies, here is an idea to enhance your smoothie-drinking life: Half fill a glass with the red one. Now pour the white one in, making sure you aim bang in the middle. Then, hey presto, you get a column of white gorgeousness in the middle. Drinking tips:
Ahhh roast pork. Nothing like it. Smells amazing, tastes amazing, is amazing. The crackling crackles so well you'll probably want to wear headphones.
Cod is amazing. It has virtually no fat/salt/junk in it (I know, I read the packaging). Sure we chuck a bit of mayonnaise in this recipe but it makes it taste great and really it's so little that it is hardly worth worrying about.
People can get very hung up on their recommended daily allowance stats but I think that provided you are eating a balanced diet then it doesn't matter. You might not like this but I think the best "diet" as such is just eating a bit less. Certainly from my experience I know that when I am at home I eat soooo much more than when I am at university. This is because food is kind of 'on tap' at home. And the more I eat, the more I want to eat! But when I am at university I have to cook everything and buy everything so I don't really over-eat (although I do binge on Tesco Cookies every now and again!). Anyhow, this is a a splendid recipe and a great meal. This recipe covered 3 people but it could easily do 4.
Easter! Woooppp! That time of gorging on wayyyy too much chocolate. I always try and eat as much as a can on the day itself and justify it by saying that I have just written that day off and I won't eat any more on any other day.... Not sure how well that works, but hey!
This is a classic sponge recipe and great when decorated with some lovely easter bits and pieces! Enjoy!

So Ravi and Chloe have both gone home for interviews (woooopp good luck!) and that leaves Rob, Cora and I still in Durham. Cora is a bit of a basketball queen so 'twas just Rob and I here last night. This is what we made. It is based on a recipe by Paul Hollywood only we used a different amount of flour, no chocolate chips and no semolina.... It's really good.
