Super simple, super sumptuous.
- Risotto rice, 250g
- Ham, choppped, if you've got it
- Boursin cheese, about 2 tablespoons
- Handful of parmesan
- Cherry tomatoes
- Mushrooms, about 10
- About 3/4 of an onion
- 2 beef stock cubes in a pint of water (plus more)
- A little dill
Method
Boil a kettle. Fry the onion, mushrooms and tomatoes with a pinch of dill then put to one side.
Add the stock cubes to the water and stir so it's all dissolved then add to the rice in a pan on the hob. Watch it cook, continually stir and top up if necessary. If you don't stir, it will burn.
