Loosely based on a recipe from the Gü Chocolate Cookbook (which I thoroughly recommend). Although I thought using puff pastry would be strange for this, it actually makes it slightly lighter. Enjoy. So Barking Baking is now 6 months old!! Awwww! We have Jamie Oliver to thank for this recipe. Great fun to make and taste fantastic. Very rich indeed and the chocolate mix can be made days in advance.
Have a super Christmas everyone. I think this recipe came from my old art teacher who is something of a star baker! These are gorgeous but actually very easy to do. Just make the dough and leave it to rise and that's basically it. So this is an adapted Mary Berry (we love you!) recipe. Actually introduced to me by my mother who had it when she stayed with my Great Uncle and Aunt (Charles and Mary) on her way up to Durham to pick me up. She was raving about it, so we had to try it. It's delish!
OK this must come with a health warning! It is absolutely the sweetest thing that has ever been made in the Barking Baking kitchen. My HUGE thanks to Ronald for introducing me to this traditional sweet treat from the Philippines. He assures me that if in doubt, add sugar. Sounds good to me!
This is very easy to do and absolutely incredible. Try it. OK. It's December. It's Christmas. We have to have mince pies. This is a really easy recipe - originally a Paul Hollywood but I have added a bit more sugar. Give it a go. Rob, Elena and I made these and they are fantastic! Check out the video below! I think it is generally accepted that Bagels are the best type of bread. Nothing beats them. For Ultimate Frisbee players, to bagel another team is the greatest display of superiority. To the rest of the population, they are just great for brunch or a cheeky snack at 3pm in the afternoon.
However, this blows anything you have done with a bagel out of the water. It is stunning. A kind of bagel pudding. It is crunchy on the outside, moist in the middle. Absolutely gorgeous. And at the time of writing, they are on offer in Tesco! Such fun! Nothing like a good apple tart on a cold December day. Furiously procrastinating right now. Give it a go! This recipe was taken from Jamie Oliver's website but was actually done by a lady named Maddie Rix. It is amazing! I have always been a little hesitant to leave out flour - it is such a staple that it just seems wrong to have it loiter in the cupboard. However, this has changed my views. Get on it. It is cheap and tastes a bit like brownie (i.e. fab). We've affectionately nicknamed it "cowpat cake" because it looks like one...as a result it is pretty difficult to present nicely. But it does taste gorgeous. Now it is December (and basically Christmas) I find myself yearning cake. This smells particularly gorgeous. I did not have time/was too lazy to peel the apple; from a purely aesthetic point of view I would peel them if you have time! This was part of our pudding for the grand Thanksgiving meal! It was really good. Not going to lie I had planned on making the pastry but lectures finished late and so I did not have time. This uses ready roll puff pastry and it is divine.
This is largely the same recipe as the Bread and Butter Pudding recipe I posted the other day but this time it has two layers and two different types of chocolate! SPECTACULAR.
We had this as part of our Thanksgiving pudding! Absolutely incredible. Rob, our resident engineer, assembled this one beautifully and made a very good call about adding more milk mid-way through the cooking. The top needs to be slightly soggy. Not crisp, but must have some chew to it. It is Thanksgiving tomorrow and so this is part of my homage to that day. Doughnuts (or, if we are to be all American about this, Donuts) are one of my favourite things; this recipe is one of Paul Hollywood's - only he uses Strong White Bread Flour (which I did not have), nutmeg (also absent) and no Mars Bar (wooop we love Mars Bar).
The dough takes hours to make but the frying is super quick and quite fun! Make sure you have the extractor fan on - set the smoke alarm off about 5 times.... This is a great little pudding; takes no time to prepare and then you just leave it in the fridge and eat whenever you like! Ingredients
Method Melt the chocolate using a Bain Marie. Whisk up the cream - it should still remain runny but should be a little thicker. You kind of want it on the edge of being thick... When the chocolate has melted, pour it into the cream and whisk for 15 sec - it should thicken quickly but peaks should not form. Pour the mix into two ramekins and put a dollop of peanut butter in the middle of each. Cover with cling film and put in the fridge for a couple of hours. It will turn into a thick creamy mousse thing. Very bad for you but absolutely delicious! I suggest eating with a biscuit to give it a bit of crunch and maybe sprinkling some hot chocolate powder over it when eating! OK I feel I owe an apology to the Bakewell Tart for this. I did not have any almonds and had to use up my shortcrust pastry as it was going out of date. This was really good though so give it a go!
This baked chocolate cheesecake was a glorious moment in the history of humanity. Rob and I made this together originally but the recipe comes from the Gü book that Lawson Terrace gave me for my birthday! It was absolutely delicious. Coralicious thought it was good, so it must be good.
Remade this in October 2016 and it's still amazing. It's actually very easy so give it a go! Want a No Cook version? Try the Chocolate Heaven Pudding, it's super easy and utterly delish. OK this is kind of a cookie and kind of a cake. I am still yet to perfect the cookie. The trick to making it more cookie-y is leaving it to cool completely (it goes hard). The problem is I want instant gratification and so just ate it when it was part cookie, part cake. In any case, it tastes great and is a great 5 minute sugar kick!

BOOM. And Cora, the dark horse, is out and about again. She made this one for Nick's birthday. It is fabulously moist and the icing is to die for. One of Lorraine Pascale's recipes. Absolutely fantastic. Update: made this for Will's birthday recently and used a different sized cake tin; it was about 8 inches I reckon (so quite big) and it only took 15 mins to cook. So basically watch out. This cake was nothing short of staggering. Bekah made it for Chloe's birthday and it was glorious. It looks fantastic, it tastes fantastic. It is a winner. What's more, it is not even that tricky. It just takes time and care! Beautiful.
Bekah: In an endeavour to make a ‘not-your-typical’ birthday cake, I thought I’d make a rainbow cake. It’s incredibly easy to make and pretty much just a twist on the classical Victoria Sponge cake. I first did these when Trevs SCA ran a cake stall. It was great and we got involved by making these cupcakes! They all sold out so they must have been ok. You can make them with this recipe. So easy. Get involved. This time I popped some raspberries on top and this was a great addition. The other night we had a bit of a film sesh; we all sat down and watched Cool Runnings, which is all about the first Jamaican bobled team! Suuuccchhh fun! Anyhow, it turned into a bit of a baking sesh - there was chocolate cake, rocky road, cinnamon biscuits and then there was this!
I used to do art at school and the lady who taught me also happens to be one of the best cooks/bakers in the world (there is no denying it). I once did a day cooking with her and we made Chelsea Buns. I could not find the right bits and pieces for those but I could find chocolate spread! This, then, is Mrs Hollands' recipe that I have adapted somewhat. It is a divine recipe! Also, people seem to be scared of yeast. Don't be. Try this. It is hard not to like rocky road.
