It's almost too good to be true...but it isn't. It's healthy, fun, easy and actually tastes like ice cream. It's best when you make it and then eat it straight away otherwise it can go a bit brown. Enjoy!
This is exactly the same recipe as the Coralicious Chocolate Cake but you only cook it for 23 mins at 180. The recipe does 12 cupcakes with a little bit left over (good if you like to lick the bowl).
I had hunted around for a simple, great recipe for cookies for a while and then I came across this. It's fab. These are the cookies I made for the Durham Give A Rose scheme I run with Venus. I hope you enjoy making (and eating!) them. Gorgeous. Easy. Winning. Ingredients
Method Melt the butter over a low heat. Bash the digestives up in a plastic bag with a rolling pin until they are all crumbly. Pour the biscuit into the melted butter and, whilst it is still on the low heat, stir up so that everything is coated in butter and the chocolate is melting. Add this to your baking tin (with removable bottom ideally) and press down with the back of a spoon to form a base. Put to one side. Melt the white chocolate in a bowl over some boiling water (this is called a Bain Marie). Meanwhile, pop the cream cheese in a bowl and whisk it for a few seconds so that it looks all creamy. When the chocolate has melted, take it off the heat and let it stand for a minute (to cool a little). Pour the chocolate in with the cream cheese and whisk until all combined. Cut up the strawberries and add them to the mix. Stir together with a spoon (not the whisk) and then pour on top of the chocolate base from earlier. Pop in the fridge for a couple of hours and add a few more strawberries on top before serving. Elena and I made these in Cornwall; the recipe came from the condensed milk tin and it actually works and is lovely. We had a fab week and managed to swim every day. I know. Mad. Absolutely freezing but after a while you go numb so it feels warm. Such fun.
I got in touch with Mark from "Outside of The Breadbox" a while ago and he very kindly agreed to let me try his recipe for Eclairs. This is the result. It is rather fab. You can find the original recipe here. Mark used cherries but I used strawberries and blueberries as that's what we've got in the house at the moment. This is quite difficult as there are lots of different things you need to do but I had a lot of fun doing it so well worth the effort.
The cat, Truffle, was most intrigued by the eclairs! I think he approved. You can also drizzle some chocolate on top or melt some and then dunk the eclairs in/drizzle as you go if you are feeling like some real indulgence. It's summer, and the living is easy. Grab a nest, pop some cream in the middle then pile on the fruit. Done. So today is our first birthday! One year has passed since I started BarkingBaking.com! Thank you all for such fantastic support; this is rather delicious - the icing is sweet but not cloying. The taste of the raspberries balance very well with the chocolate. Well worth it.

Whatever you call them, I'm not going to lie, they're addictive. Sound impossible to do, but they're not. I've finally got a great recipe that works for this - I've tried 9 times! This is splendid. Our version of a molten cake. A couple of important things to note: 1. Use dark chocolate - the 30p stuff from Tesco is not ok. 2. Cut the baking paper into circles that fit into the base of the ramekin. 3. Be really careful peeling the baking paper off. This recipe is based on one by Dr Oetker. It's great. You'll never need to buy those Tesco ones again! Cora and I made a huge batch of these and sold them to raise some money for Cora's charity fundraiser! We raised over £60 in one afternoon - thank you to all who supported.
I have a good friend, Ross, who did something very similar to this last year, although I think he may have used cream. This is the Barking Baking version. It's pretty lovely. Not going to lie. It didn't last long, which is always a good sign for a cake! I got my strawberries from the grocer on North Road; the gentleman outside sells 2 punnets for £1. Not bad. Anyhow, this is very easy to do and tastes lovely. Plus, it's got fruit in it so it's basically healthy.
Enjoy. So this is really really good. The recipe is based on one from a cookbook Elena has. The original recipe puts sugar in, but to be honest you really don't need it so we didn't bother (and kind of forgot). If you are doing a nice supper or just fancy something to nibble on in these long post exam days then this could be your solution...! Enjoy.

Equally, it seemed silly just to drink #ResponsibleStudent so I've turned it into some ice cream! Elena and I made this and we even invented a special way of holding a whisk without having to buy one of those £500 things from John Lewis in the process... check out the video below!
Jam jars are great for ice cream as you can use them for little puds and also you don't end up eating your entire batch in one sitting. This recipe does about 3 jars. Wooooaaaahhhh these are so good. Fruit cake is underrated. Chocolate gets all the good press and fruit cake just doesn't. This recipe is brilliant; have been using it for years. It is moist without being heavy. Takes a bit of time but definitely worth it.
Easter! Woooppp! That time of gorging on wayyyy too much chocolate. I always try and eat as much as a can on the day itself and justify it by saying that I have just written that day off and I won't eat any more on any other day.... Not sure how well that works, but hey!
This is a classic sponge recipe and great when decorated with some lovely easter bits and pieces! Enjoy! Love a good pancake. This is super easy and works like a dream. Check out the video for a full walk through. Makes two. This is runnier than the other pancake recipe and so you can make more crepe-like pancakes. Not really sure what the difference between crepes and pancakes are; think crepes are basically a bit thinner. This is really easy and perfect for the end of term when you have no proper food left #student. Enjoy. So I tried this when Elena, Venus and Xiang came over for supper the other day. Xiang brought a rather fab rice thing which I have not been able to get the recipe for (yet!) and Elena and Venus did a stir fry! I have no idea what this is supposed to be like but it came out nicely; it is quite moist inside and a little bit like bread and butter pudding or brownie. Well worth a try. Who doesn't like pancakes? No one. Honey and bacon is a really great combination for a bit of breakfast in the morning/a nice lunch. This is very easy, give it a go.
OK so the other night I tried to make a ham, boursin and olive tart thing - it sounds good but something just went wrong. Not disheartened I then tried this. The cake recipe is based on the one I use for Peach and Mango Pudding and is fab. Baileys is great. Don't add too much; you want it subtle, suave and sophisticated.
Elena and I did this together. She has done them before so is a bit of a pro! They were really good; everyone thinks they are really complicated to cook but actually they are surprisingly easy. And some recipes will tell you that you need a blow-torch to caramelise the top but if you chuck it in at the top of the oven then that does the job. This recipe is based on one by Simon Rimmer. Try it! Loved this. I have tried it before with real raspberries but it went soggy; using jam prevents this. Got inspired by a lawyer friend (Peng) who was eating a white chocolate and raspberry muffin! Ellie was the first person to try it and it went down very well I think! Give it a go, it's a tasty way to procrastinate.
WOOOPPP. 200 recipes alert! Exciting times. We are having serious problems with our oven at the moment; thus, this is a pudding not a cake due to its seriously gungy nature. It is kind of brownie-y. Very nice though.
