I think this recipe came from my old art teacher who is something of a star baker! These are gorgeous but actually very easy to do. Just make the dough and leave it to rise and that's basically it. Rock cakes are great. They are harder than your average cake. They have quite a lot of flour in them which is what makes them slightly more "rocky". If you want a really rocky look, don't roll the dough into balls as I have done below, instead grab a fork and kind of scrap them onto the baking tray.
Lots of cinnamon in these as I think that Christmas is all about a little bit of spice/being slightly exotic. Hope you enjoy them! So this is an adapted Mary Berry (we love you!) recipe. Actually introduced to me by my mother who had it when she stayed with my Great Uncle and Aunt (Charles and Mary) on her way up to Durham to pick me up. She was raving about it, so we had to try it. It's delish!
HOW FUNKY IS THIS!?! Love it. Really getting into the christmas mood! Heading home tomorrow! Cheerio Durham! This tastes a bit like hot cross bun to be honest - very nice! This does not take as long as other bread as you do not need to leave it to prove for hours....
OK so this is great if you cannot be bothered to make proper mince pies. Literally the easies thing in the world.
Saw some Stilton and couldn't resist. I am pleased to announce this is vegetarian #CowRightsRepresent. Very easy. Very nice. The first time I did this I used a tin where the bottom comes out else the milk leaks into the oven; this resulted in a tart. Tasted lovely but not worth cleaning the inside of the oven out every time! If you use a proper dish it makes a lovely quiche! OK this must come with a health warning! It is absolutely the sweetest thing that has ever been made in the Barking Baking kitchen. My HUGE thanks to Ronald for introducing me to this traditional sweet treat from the Philippines. He assures me that if in doubt, add sugar. Sounds good to me!
This is very easy to do and absolutely incredible. Try it. Last Sunday Elena and I went to the Durham Christmas Market. We bought the most amazing sausages from The Northumberland Sausage Company. They made this pasta bake soooo good! Thoroughly recommend them or indeed any slightly funky sausage!
OK. It's December. It's Christmas. We have to have mince pies. This is a really easy recipe - originally a Paul Hollywood but I have added a bit more sugar. Give it a go. Give it a go! This recipe was taken from Jamie Oliver's website but was actually done by a lady named Maddie Rix. It is amazing! I have always been a little hesitant to leave out flour - it is such a staple that it just seems wrong to have it loiter in the cupboard. However, this has changed my views. Get on it. It is cheap and tastes a bit like brownie (i.e. fab). We've affectionately nicknamed it "cowpat cake" because it looks like one...as a result it is pretty difficult to present nicely. But it does taste gorgeous. Now it is December (and basically Christmas) I find myself yearning cake. This smells particularly gorgeous. I did not have time/was too lazy to peel the apple; from a purely aesthetic point of view I would peel them if you have time! This was a fantastic evening. Elena and Venus cooked the turkey. Ronald and David made the best mashed potato ever, and Lawson Terrace (our house) made Apple Pie and Double-Decker Chocolate Bread and Butter Pudding (posting soon!).
It was just a superb night. Thanks to Venus for the picture below. This was part of our pudding for the grand Thanksgiving meal! It was really good. Not going to lie I had planned on making the pastry but lectures finished late and so I did not have time. This uses ready roll puff pastry and it is divine.
This is largely the same recipe as the Bread and Butter Pudding recipe I posted the other day but this time it has two layers and two different types of chocolate! SPECTACULAR.
We had this as part of our Thanksgiving pudding! Absolutely incredible. Rob, our resident engineer, assembled this one beautifully and made a very good call about adding more milk mid-way through the cooking. The top needs to be slightly soggy. Not crisp, but must have some chew to it. Blink and you miss it. That is how quick and easy these are. Taste great. Look funky. Helped me with some Equity and Trust law reading...
I bought the meat for this from the butcher in the covered market in Durham. The gentleman very kindly cut the meat into thin slices for me and tenderised it (basically he hit it with a hammer thing!). This will last for a while in the fridge as long as you cover it.
Ideally serve with vegetables - perhaps some spinach? Equally nice as it is. This really is very easy - there is no frying - just lay the food in and then let it cook! These are great small meals for students. Out of this I got 1 ramekin for eating, 1 for the fridge, 2 for the freezer then two more tupperware boxes of the meat sauce which I am going to use as a pasta sauce.
So that is 6 good meals! Fab! OK I feel I owe an apology to the Bakewell Tart for this. I did not have any almonds and had to use up my shortcrust pastry as it was going out of date. This was really good though so give it a go!
This baked chocolate cheesecake was a glorious moment in the history of humanity. Rob and I made this together originally but the recipe comes from the Gü book that Lawson Terrace gave me for my birthday! It was absolutely delicious. Coralicious thought it was good, so it must be good.
Remade this in October 2016 and it's still amazing. It's actually very easy so give it a go! Want a No Cook version? Try the Chocolate Heaven Pudding, it's super easy and utterly delish. I had no idea what these were before doing them. Turns out they are like mini cinnamon dough ball cookie things. Very good! From the "Nosh For Students" recipe book. Fab.
BOOM. And Cora, the dark horse, is out and about again. She made this one for Nick's birthday. It is fabulously moist and the icing is to die for. One of Lorraine Pascale's recipes. Absolutely fantastic. Update: made this for Will's birthday recently and used a different sized cake tin; it was about 8 inches I reckon (so quite big) and it only took 15 mins to cook. So basically watch out.
OK so when I first did this I thought it was Moussaka. I was wrong. Moussaka doesn't have courgette apparently... So this is a hugo-ism. Not going to lie my Dad didn't like it but my brother and Mum did, so I thought it's worth sharing anyway. It is pretty healthy (except the cheese!).
This cake was nothing short of staggering. Bekah made it for Chloe's birthday and it was glorious. It looks fantastic, it tastes fantastic. It is a winner. What's more, it is not even that tricky. It just takes time and care! Beautiful.
Bekah: In an endeavour to make a ‘not-your-typical’ birthday cake, I thought I’d make a rainbow cake. It’s incredibly easy to make and pretty much just a twist on the classical Victoria Sponge cake. This was improvised in conjunction with our Gü recipe book. Taste great. Cookies are always a winner.
