I have a good friend, Ross, who did something very similar to this last year, although I think he may have used cream. This is the Barking Baking version. It's pretty lovely. Not going to lie. It didn't last long, which is always a good sign for a cake! I got my strawberries from the grocer on North Road; the gentleman outside sells 2 punnets for £1. Not bad. Anyhow, this is very easy to do and tastes lovely. Plus, it's got fruit in it so it's basically healthy.

Today I want to thank everyone who voted for Barking Baking in the Virgin Challenge; we had an amazing response and got 0ver 70 votes in just a matter of hours. Thank you! The story is not over, however! Virgin's site kept crashing (as you might have noticed) and so, realising that this cost people lots of votes, they are reopening the competition on 18th May at 10am. After a busy day revising, Elena and I made these rather lovely cookies. They do not take long to make - and even less time to eat. Give them a go.
So having coxed today and managing not to fall in, we decided it would be super fun to celebrate by cooking a nice new tart. This has been recommended by a fantastically loyal follower on Instagram, Dianne. I promised some time ago to do a frangipane tart recipe. So, here you go. It's based on a Tesco recipe, with some adaptions. Elena, Venus and I all thoroughly recommend it! Keep revising... but not too much. #PROCRASTIBAKE.
Ahhh roast pork. Nothing like it. Smells amazing, tastes amazing, is amazing. The crackling crackles so well you'll probably want to wear headphones.
Fruit cake is underrated. Chocolate gets all the good press and fruit cake just doesn't. This recipe is brilliant; have been using it for years. It is moist without being heavy. Takes a bit of time but definitely worth it.
Cod is amazing. It has virtually no fat/salt/junk in it (I know, I read the packaging). Sure we chuck a bit of mayonnaise in this recipe but it makes it taste great and really it's so little that it is hardly worth worrying about.
People can get very hung up on their recommended daily allowance stats but I think that provided you are eating a balanced diet then it doesn't matter. You might not like this but I think the best "diet" as such is just eating a bit less. Certainly from my experience I know that when I am at home I eat soooo much more than when I am at university. This is because food is kind of 'on tap' at home. And the more I eat, the more I want to eat! But when I am at university I have to cook everything and buy everything so I don't really over-eat (although I do binge on Tesco Cookies every now and again!). Anyhow, this is a a splendid recipe and a great meal. This recipe covered 3 people but it could easily do 4.
This recipe is a Jamie Oliver recipe with a bit of a twist; we don't put the pastry on top as it tends to go a bit soggy and it is easier to reheat the casserole if it has not got pastry on the top.
We now have 1000 likes on our Facebook page! To celebrate I just made this. It is rather splendid and great if you don't want to make a huge batch that you might be tempted to gorge on! One cookie made in a mug. Give it a go!
So Ravi and Chloe have both gone home for interviews (woooopp good luck!) and that leaves Rob, Cora and I still in Durham. Cora is a bit of a basketball queen so 'twas just Rob and I here last night. This is what we made. It is based on a recipe by Paul Hollywood only we used a different amount of flour, no chocolate chips and no semolina.... It's really good.
Key thing you will take from this is it's green!!! Woooaaaahhh. Euuuurrrgggghh. Never eat anything green.....WRONG. This is lovely. It is healthy and a bit different. Make sure you are generous when you season it.
OK so this isn't strictly mediterranean but I like to think it is (ish) because it's got olives, capers, tomatoes and chicken in it. Those are kind of the flavours I associate with the mediterranean. I'm probably wrong. But that's what this post is called anyway. So tough.
I also tried Dauphinoise Potatoes in my ramekins - worked very nicely. I have to confess I didn't use an onion as the RECIPE suggests (I didn't have one) but it is nicer with it so do try and use one. Also 4 potatoes makes about 3 ramekins; this is only a rough guide thought as they come in all sorts of shapes and sizes. OK so the other night I tried to make a ham, boursin and olive tart thing - it sounds good but something just went wrong. Not disheartened I then tried this. The cake recipe is based on the one I use for Peach and Mango Pudding and is fab. Baileys is great. Don't add too much; you want it subtle, suave and sophisticated.
Elena and I did this together. She has done them before so is a bit of a pro! They were really good; everyone thinks they are really complicated to cook but actually they are surprisingly easy. And some recipes will tell you that you need a blow-torch to caramelise the top but if you chuck it in at the top of the oven then that does the job. This recipe is based on one by Simon Rimmer. Try it! This really is nice. I had a pretty ropey rowing session this morning so needed something to make me feel more human - this did it. It takes 30 mins to cook and about 10 mins to prepare. Smoked salmon is not cheap but when you get the 3 meats for £10 then it's a no-brainer. Super delish. Give it a go. When you are finished with the quiche, pop it in the fridge with some cling film. Loved this. I have tried it before with real raspberries but it went soggy; using jam prevents this. Got inspired by a lawyer friend (Peng) who was eating a white chocolate and raspberry muffin! Ellie was the first person to try it and it went down very well I think! Give it a go, it's a tasty way to procrastinate.
WOOOPPP. 200 recipes alert! Exciting times. We are having serious problems with our oven at the moment; thus, this is a pudding not a cake due to its seriously gungy nature. It is kind of brownie-y. Very nice though.
This is a lovely little tart that smelt so good the resident vegetarians were cooing with delight! I had a bit of trouble with my oven (explained below) but it should be very easy, just keep an eye on it! A great light lunch or supper.
There is nothing like a good baked potato on a cold day. It can really hit the spot in a way a sandwich just can't. Very easy to do, so give it a go!
There is nothing like a takeaway curry but it is a huge amount of fun to try and replicate it. This is one of Gordon Ramsay's and it is brilliant. There are a lot of ingredients but they all add up to something rather fab.
This is one that can be done about 3 days in advance. If you are having a dinner party why not cut some toast into rounds using cookie cutters, pop a slab of goat's cheese on, grill it briefly and then lop the salad on top - this works very well as a smart little starter.
