For the Cake:
- 100g butter, cubed
- 5.5 pudding spoons sugar
- 2 eggs
- 6 pudding spoons self raising flour
- 4 pudding spoons baileys
- 200g chocolate
For the icing:
- 7 pudding spoons icing sugar
- 75g butter
- 2 pudding spoons baileys
Method
Pop the butter, sugar, flour and eggs in a mixing bowl. Whisk carefully to a paste.
Melt the chocolate over boiling water and pour into the cake mix. Whisk.
Add the the baileys, two pudding spoons at a time, mixing after each addition. It gets really thick.
Pop in a lined baking tin. Cook for 20-25mins at 180 - when you stick a knife in it should come out slightly gooey.
Making the icing:
Beat everything in a bowl. Spread on top when the cake has cooled a bit.
Pop in the fridge and eat when you can!
