Peach and Blueberry Ice Cream

30/9/2015

Comments

This is another addition to our healthy ice cream series! It's great. Not going to lie, it is arguably more of a sorbet. This recipe makes just one serving so if you want more, double up the ingredients. Got to start packing for my return to Durham soon and this was a perfect way to procrastinate...
Peach and Blueberry Ice Cream
Ingredients
  • 1 peach
  • Large handful of blueberries

Method

Cut the peach into slices (no need to skin it but do remove the stone). Pop the peach and the blueberries on a plate with some baking paper.  Freeze overnight.

Bung the frozen fruit into a blender and whizz until it's gone smooth - you'll need to use a fork to push the mix down the sizes of the blender.

Eat!

Giovanni Rana with Easy Tomato Sauce

23/9/2015

Comments

This evening we all sat down and had a lovely meal. Hamish is busy trying to get sorted for university and so I had quite a good day today. As some of you will know from our Snapchat feed, I was trying out some Giovanni Rana pasta tonight after their people reached out and suggested we give it a go. We also cooked a very easy tomato sauce with it. Check out the recipe and our verdict below!

Super Healthy Strawberry and Banana Ice Cream

17/9/2015

Comments

This really is gorgeous. Ice cream. Healthy. Fruit. You don't really get anything better. No added sugar. Just fabulous. Do it.
Super Healthy Strawberry and Banana Ice Cream
Ingredients

  • 2 bananas
  • 5 strawberries

Method

Peel the bananas and cut them up. Hull (ie cut the green bit off) the strawberries and cut them into halves. Pop it all on some baking paper on a plate then freeze (overnight works great).

Then when you want to make the ice cream, blitz everything in a blender until it's super smooth. You will probably need to poke a fork in and scrape the fruit down towards the cutty bit of the blender a couple of times.

Serve immediately or pop in a pot, cover and freeze - be aware this (obviously) makes it go hard and it will not be the soft gorgeous stuff you get when you eat it immediately.

How to make a cookie in the microwave

16/9/2015

Comments

This is by far the best biscuit/cookie you can make in the microwave. It takes no time at all to make and, given you are not baking it, it really is pretty decent. I would definitely recommend giving it a go. One thing you should remember is that not all microwaves are created equal - by this I mean that they all have different power outputs so you'll have to experiment to see what timing works best for you!

One Ingredient Ice Cream

14/9/2015

Comments

It's almost too good to be true...but it isn't. It's healthy, fun, easy and actually tastes like ice cream. It's best when you make it and then eat it straight away otherwise it can go a bit brown. Enjoy!

Coralicious Cupcakes

This is exactly the same recipe as the Coralicious Chocolate Cake but you only cook it for 23 mins at 180. The recipe does 12 cupcakes with a little bit left over (good if you like to lick the bowl).

Barking Baking Chocolate Cookies

I had hunted around for a simple, great recipe for cookies for a while and then I came across this. It's fab. These are the cookies I made for the Durham Give A Rose scheme I run with Venus. I hope you enjoy making (and eating!) them.

Pork Tenderloin with Cream and Cheese

Apparently my grandmother gave this recipe to my mum but she couldn't really remember. All very strange. However, this was a lovely supper; suggest having lots of vegetables and rice with it.
