Love toad in the hole. Sadly it is often done without the toad actually in the hole - kind of near the hole. Not good enough. This is how to do it properly. Nice with mashed potato, tomatoes, courgette and ketchup!

Sushi is one of those things that intimidates the novice chef. However, we can now report that it is not that difficult. It is a light supper or a starter for a more serious meal. Tuna and avocado works well, as does salmon and cucumber. You can have loads of fun arranging and beautifying it - check out our funky fish below!!!

Part of the problem I find with smoothies is that they are often so stuffed full of fruit that they become, as has been widely reported, almost as bad for you as sugared drinks like Coke. Thus, it seems sensible to make a drink out of just one fruit. Yes, you are not getting all of your five-a-day from this, but equally you are not getting the sugar intake. So easy. 
One Shot Peach Milk
Just chuck a whole, stoned peach in a blender with a glass of milk. Done. Skin if you feel strongly about it but I really don't care so I did not bother.

Peanut Butter Coconut Strawberry Bread

We have teamed up with America! Steph, who runs MakeThatThreeDozen.com, is going to try one of my recipes and we have tried one of hers.  It is delicious. You have to try it.

Strawberry Coconut Peanut Butter Bread
Ingredients


  • 4 tbs white sugar
  • 1 tbs brown sugar
  • 10 plain flour
  • 1 teaspoon cinnamon
  • Coconut cream (2 tbs)
  • 1/2 cup peanut butter
  • 1 egg
  • 1 tbs greek yoghurt
  • 1/4 tsp salt
  • 1 tsp baking powder
  • Strawberries - loads


Method

Mix the sugars, coconut cream and peanut butter in a bowl with an electric whisk. Chuck in the yoghurt and the egg and blitz until creamy. 

Fold in the baking powder, flour, salt and cinnamon with a rubber spatula if you have got one. If not, don't worry too much about it. 

Cut your strawberries into quarters and fold into the mix. 

Line a baking tray with baking paper and fill it up. Pop it into the oven for about 30-40 minutes at a high temperature (180 degrees). If it looks like it is burning, cover with silver foil. 

Niiiiiceeeee.

This is real comfort food. It is easy to prepare and takes about an hour to cook. Will warm you up on a cold day! A great, easy recipe. Recipe makes about 4 meals worth (jam jar them up and freeze them).

I love duck. Chicken is nice, but duck is better. This was a combined effort with Hugh Fearnley-Whittingstall and my aunt (see the post "Easy Healthy Tangy Parfait"). It is spicy and rich. It looks and tastes complex but is actually super easy. The trick is knowing how!

I owe this one to my fantabulous aunt. A nice easy pudding and absolutely delicious. We have been on holiday in Cornwall (wooo go Cornwall!) for a bit - fortunately Hurricane Bertha kind of just grazed our bit so we have still been able to beach and sail and things. There is something about sea air that takes it out of you so it was really nice to sit down and have a proper meal! This is splendid. Try it.
