This is a classic sponge recipe and great when decorated with some lovely easter bits and pieces! Enjoy!
- 160g butter
- 160g caster sugar
- 2 eggs
- 160g self raising flour
- 30g cadbury's drinking chocolate (or equivalent) (abut 2 tbs)
For the filling/topping
- 90g butter
- 120g icing sugar
- 100g dark chocolate
Method
Cut the butter into a large bowl. Add the sugar and beat until it turns into a paste. Some people suggest heating the butter slightly but I never really like doing that (I just think it makes the cake go a bit weird but that is probably a Hugo-ism) so I just beat it patiently!
Now add in the eggs and beat. It will look like fine scrambled eggs!
Pop in the flour and beat carefully (if you just go wild it'll spray flour everywhere). Add in the chocolate powder. Beat.
Pop in two round baking tins - lining with baking paper. Cook for 17 mins at 180, covering with tin foil after 13 mins.
Leave to cool for a bit. In the mean time make the filling by melting the chocolate over boiling water (Bain Marie) then pour the melted chocolate over the butter and add in the icing sugar (carefully whisking else it goes everywhere).
Now spread it over the bottom half of the cake and then on the top half. Decorate with chicks and eggs! (but which came first?)
