Do it.
- 100g butter, warm
- 100g muscovado sugar
- About a pudding spoon of golden syrup
- 150g plain flour
- 100g chocolate
- At least six pieces of fudge
Method
Blitz the butter and sugar together. If the butter is cold, pop in microwave for about 20 secs.
Add the syrup. Blitz. Add the flour and mix carefully. It should turn into kind of thick crumbs.
Break in the chocolate. Grab a handful of the mix and flatten it in the palm of your hand. Pop a piece of fudge in the centre and then wrap it up into a ball. Make sure no fudge is exposed.
Pop the cookies in ball form onto a baking tin lined with baking paper. I got 6 out of this mix.
Cook for 5 mins at 180 then take out and squish the sides down gently with the back of a spoon - try not to expose the fudge but at the same time make sure it's not too thick.
Cook for a further 5 mins (and about 20 secs). Take out and let cool.
