A very nice recipe, and it's healthy too!
- 400g slow cook beef
- 1 onion
- 2 tins of chopped tomatoes
- 1.5 glasses of Port (if you have it) or red wine
- 2 carrots
Method
Fry off the meat and chopped onion in some olive oil until the meat is brown. This takes a bit of time and plenty of stirring. Add in the chopped, peeled carrots then the chopped tomatoes and port/wine. Stir. Season.
When it's boiling, pop it in the oven with a lid 30 mins then take it out, give it a cheeky stir, then chuck it back in for another half hour. Then take it out and add in another half glass of port/wine then pop back in for a final 30 mins. All at 180.
Make rice in the last 30 min segment. Serve with green beans if you have them.
