- 85g butter
- 2 tablespoons golden syrup
- 300ml boiling water
- 300g self raising flour
- 100g sugar
- 25g cocoa powder
- 1 tsp bicarbonate of soda
For the topping
- 1 pudding spoon icing sugar
- 1 pudding spoon water
- 1/4 tsp cocoa powder (see vid)
Method
Pop the butter, syrup and water in a measuring jug. Stir together until all melted. If you've only got one measuring jug and forget to put the water in before, just zero the scales and weigh out 300g of water as 1ml=1g. #funky
Weigh the flour, sugar, cocoa powder and bicarbonate of soda into a mixing bowl then gradually add the buttery water (sounds nasty!) in, stirring all the time. Don't worry that it is quite wet.
Pour the mix into a loaf tin with some baking paper in the bottom so it's easy to get out.
Cook for 15 mins at 160 then cover with foil and then cook for a further 35 mins. I checked it every 15 mins or so.
Make the topping by just mixing the icing sugar, water and cocoa powder together and drizzling it on.
