Lots of cinnamon in these as I think that Christmas is all about a little bit of spice/being slightly exotic. Hope you enjoy them!
- 110g butter
- 130g sugar
- 220g Sr flour
- 1 egg
- 90g sultanas
- 50g raisins
- 25g orange peel (not as weird as it sounds - get it in pots from the supermarket)
- 35g glacé cherries
- 1 large tablespoon of ground cinnamon
Method
Whisk up the butter and sugar until it resembles bread crumbs. Now add the egg. Beat until smooth. Chuck in the flour and beat to a paste - be careful at the beginning as it will try and go everywhere!
When it is a thick paste, add the fruit and the cinnamon.
Line a baking tray with greaseproof paper and roll the dough into small balls about 1.5 inches in diameter. Space them well.
Cook for 10 minutes at 200. Allow them to cool for about 5 mins on the tray then take them off and pop them on a cooling rack.
I decorated mine by cutting a star out of a piece of paper, laying it on top of each one individually and sieving some icing sugar over it. Suggest you use some tweezers to pick the star up otherwise you might smudge the top.
Beautiful.
