Made some lemon cupcakes the other day. Problem was they take time. This really doesn't! Hungry? Do it!

Mix everything together aggressively with a fork. Chuck in the microwave for about a 1 minute and 10-20 seconds. Remember, you want to take it out and it not sink too much (unless you fancy a nice gloopy cake-mix cake).
Dust with icing sugar to be artistic.

- A good hunk of butter, melted slightly (or double cream)
- 3 tbs caster sugar
- 3 tbs self raising flour
- 1 egg
- Good squeeze of half a lemon (see vid)
- Icing sugar, for dusting
