So that is 6 good meals! Fab!
- Good handful of mushrooms
- 2 leeks
- 1 large onion
- 500g beef mince
- 2 tins of chopped tomatoes
- Worcestershire sauce
- 1 glass of red wine (plus more for you)
- Salt and pepper
- Microwaveable mash (I actually used Tesco Tangy Cheesey Mash for a bit of an extra kick!)
Method
In a large pan, fry up the chopped onion, leek and mushrooms in some oil initially, adding a large knob of butter after about a minute. Add a good couple of tablespoons of Worcestershire sauce.
Now add the mince. Brown it.
When the meat has browned, add two tins of chopped tomatoes and a glass of red wine. Season. Simmer in the oven at 200 degrees.
Whilst it is simmering, put the mash in the microwave for 3.5 minutes. Then for a further 2 minutes (follow the instructions on the packet).
When this is done, decant the meat into the ramekins. Cover with a good hunk of the potato and some cheese.
Cook for about 15-20 mins, or until it is turning golden on the top! If you have been generous with your servings and it looks like it might overflow, chuck the ramekins on a baking tray so that it doesn't all go everywhere. Not about that.
Eat! When you freeze it, just cover with clingfilm.
