Enjoy.
For the cake:
- 2 eggs
- 140g (5oz) butter
- 140g (5oz) caster sugar
- 140g (5oz) self raising flour
- 1 pudding spoon Amarula (probably not 100% necessary but it makes it more exciting)
For the icing:
- 150g butter
- 150g icing sugar
- About 150g strawberries, halved
Method
For the cake:
Beat the butter and sugar together to a paste. Add the eggs and beat again. It will look like scrambled eggs to start with but this soon goes. Add in the flour and Amarula and beat carefully (else it goes everywhere).
Spoon the mix into two baking tins lined with baking paper and cook for 10 mins at 200 or a bit longer if at 180.
For the icing and topping:
Whilst the cake is cooking, pop the 150g butter and 150g icing and beat together to a paste. This is your icing for the middle and the top.
When the cake has come out and cooled entirely, spread the icing on the top of one half and sandwich the two cakes together. Now spread the remaining icing on top and stick the strawberries on.
Eat!
