- Mixed salad pack
- 4 tomatoes, quartered
- A large hunk of feta cheese, cut into narrow squares
- 1 avocado
- Some chopped coriander
- 4 spring onions, chopped
For the dressing:
- Olive oil
- Juice of half a lemon
- Half a teaspoon of Dijon Mustard
- Salt and pepper
Method
Pop the salad pack in then arrange everything on top so that it looks pretty. Add the avocados when you are pretty close to eating otherwise they go brown. Equally, you can make the dressing early but don’t pour it over until just before you eat it.
To make the dressing: pour about an inch of olive oil into a mug, add the juice of half a lemon (try and ensure no pips go in) and the salt, pepper and mustard. Give it a good stir before pouring over.
