I did not have time/was too lazy to peel the apple; from a purely aesthetic point of view I would peel them if you have time!
- 6 pudding spoons caster sugar
- 6 pudding spoons self raising flour
- 100g butter
- 2 eggs
- 1 large Bradley/English Cooking Apple
- 2 pudding spoons of brown sugar
- 1 pudding spoon cinnamon
- Four good tablespoons sultanas
Method
Mix the butter and sugar together. Add the eggs and flour. Whisk carefully (so the flour doesn't go every-wahhh) until all combined.
Chop the apple into pieces - the way I did this was to cut it off centre and then cut half-moon shapes.
Put the brown sugar and the cinnamon in a bowl and toss the apple in it. Add to the cake mix. Also add the sultanas.
Give it all a good stir with a wooden spoon and pop in your baking dish.
Cook for 20-25 mins at 180. I put it near the bottom of the oven for the first 15 mins and then lifted it nearer the top for the rest to make it turn golden brown. As ever, test to see if it cooked by sticking a knife in and it should come out clean.
Sprinkle a bit of brown sugar over the top to make it look nice!
